- 400 g Tin chopped tomatoes
- 1 Large onion
- 1 Red pepper
- 400 g Tin cannellini or butter beans
- 1/2 Chopped red chilli
- 2 Garlic cloves
- 1 tbsp Olive Oil
- Pinch Salt & pepper
Lightly fry onions, pepper & garlic for 3-4 minutes
Add chopped tomatoes & beans & cook until hot
Add chilli & seasoning & serve
Strawberry & Blueberry Porridge
A quick and easy warming porridge.
- 120 g Porridge oats
- 500 ml Almond milk
- 1 tbsp Strawberries
- 1 tbsp Blueberries
- 1 tsp Cinnamon
- 1 handful Chopped almonds
Place the oats and almond milk in a pot and heat for 3-4 minutes until the oats are plump and have soaked up the milk.
Serve and top with fresh strawberries, blueberries and chopped almonds. Add a tsp of cinnamon to taste.
