Cod & Chickpea Stew

Ingredients

  • 400 g Tinned chopped tomatoes
  • 2 Garlic cloves
  • 1 Onion
  • 1 Red pepper
  • 400 g Tinned chickpeas
  • 2 tsp Paprika
  • 2 Cod fillets
  • 1 tbsp Olive Oil
  • Parsley, to garnish

Instructions

  1. Place cod in oven and bake for 20 minutes at 180c

  2. Lightly fry the onion, garlic & red pepper for 4-5 minutes

  3. Add the chickpeas and tomatoes & cook for a further 5 minutes

  4. Add paprika and a pinch of salt & pepper

  5. Garnish with parsley

  6. Serve the cod on a bed of chickpea stew
