Cod & Chickpea Stew

Ingredients
- 400 g Tinned chopped tomatoes
- 2 Garlic cloves
- 1 Onion
- 1 Red pepper
- 400 g Tinned chickpeas
- 2 tsp Paprika
- 2 Cod fillets
- 1 tbsp Olive Oil
- Parsley, to garnish
Instructions

Place cod in oven and bake for 20 minutes at 180c

Lightly fry the onion, garlic & red pepper for 4-5 minutes

Add the chickpeas and tomatoes & cook for a further 5 minutes

Add paprika and a pinch of salt & pepper

Garnish with parsley

Serve the cod on a bed of chickpea stew
